28 May Baked vegan and gluten-free chia donuts
Are you ready for National Doughnut Day 2018? Yes! National Donut Day (or Doughnut) is on the first Friday of June, succeeding the Doughnut event created by The Salvation Army in Chicago in 1938 to honor those of their members who served doughnuts to soldiers during World War I.
Everyone loves donuts, there’s something about that delicious deep-fried treat that brings a smile to everyone’s face. But today Gold Foods USA brings the perfect alternative: baked vegan and gluten-free chia donuts! A delicious recipe for baked, sweet and low in calories donuts. Ingredients
- ¼ cup Gold Foods USA chia seeds
- 1 cup nuts (We use cashews, but you can also use walnuts or peanuts, for example)
- 1 cup gluten-free oats
- ½ cup grated coconut
- 1 pinch of salt
- 1 ½ tsp. baking powder
- 2 tbsp. cocoa powder
- 1 tsp. Vanilla extract or cinnamon
- ¾ cup date paste
- 2 tbsp. coconut oil
Recommended toppings
- Chopped pistachios or hazelnuts
- Melted chocolate
- Sugar-free jam
- Coconut cream and grated coconut
- Fresh fruit
- Almond or peanut butter
- Yogurt
Instructions
- Preheat the oven to 325 degrees F (160 degrees C).
- Meanwhile, prepare all the ingredients.
- Place the nuts, oats, grated coconut into a food processor and grind until getting a fine paste.
- Add the cocoa powder, chia seeds and the rest of the ingredients and stir until combined.
- Spoon the coconut oil into a greased donut pan.
- Pour the dough and put some pistachios or hazelnuts on the top of it.
- Bake for 20 minutes until they are golden brown and let them cool before unmold them (if you want to make it faster, bake it in a higher temperature).
- Finish them with your favorite topping! You can preserve them 3 to 4 days in the refrigerator.
It is generally a healthy recipe, moderate in calories and suitable for different types of diet. In addition, you can give your special taste adding your favorite toppings to the dough. No more fried donuts.
