Ingredients for 6 pieces:

  • 1 ¾ cups of Gold Foods USA quinoa soaked in water the night before
  • 1 cup of water
  • ¼ of oil (olive oil for better taste and a healthier option)
  • 2 tablespoon of Gold Foods USA chia seeds
  • 2 pinches of salt
  • ½ teaspoon of baking soda
  • Half squeezed lemon
  • ½ cup of amaranth flour (or any other gluten-free flour)
  • ¼ of sunflower seeds

 

Step by step:

  1. Preheat the oven at 200ºF (160ºC).
  2. Soak the Gold Foods USA chia seeds in ½ of a cup of water until doubling its size.
  3. Take the Gold Foods USA quinoa soaked in water the night before and the chia seeds and put it in a blender with the other ½ of the cup of water, the oil, the baking soda, salt and lemon. Blend it for 3 minutes approximately, until having a sticky paste-like consistency.
  4. Add the amaranth flour (or the one you choose) little by little until integrate it completely with the dough.
  5. Line an oven-proof mold with greaseproof paper and spray it cooking oil spray.
  6. Pour the blend in the mold distributing it perfectly.
  7. Cover it with the sunflower seeds.
  8. Bake for an hour until you see a golden color on the outside and slightly humid on the inside.
  9. Take out the mold and let it cool down.
